Hi! How are you guys? I hope everyone is healthy and well. I am back with a new recipe today, but its not the only thing that’s new. We are happy to introduce our YouTube Channel with this recipe. The name of the Channel is Chef Karan Kakkar’s Alcove and we will be posting the instructional videos for the recipes here. I hope it will help everyone in understanding the recipe in a better way.
The recipe for today is Kachche Kele aur Anjeer ke Kebab. This is a very easy dish with a limited number of ingredients but its still quite exotic for the Indian Cuisine. Bananas are a very common fruit and there are a number of varieties available throughout the country. We have your normal bananas, red bananas and elaichi bananas (these are the small and cute variety), among others. But there is also the Raw Banana that can be found almost everywhere. It is used a lot in various local cuisines and I came across this recipe when I was working in Bengaluru (Bangalore at that time). There are just 3 main ingredients in the recipe and those too are quite common place, but the resulting product of the combination is quite special. So let’s don our Chef Hats and plunge right into this recipe.
Ingredients
Raw Bananas 6 nos
Boiled Potatoes 2 nos
Dried Anjeer / Fresh Anjeer 10 nos / 4 nos
Red Chilli Powder 1/2 tsp
Jeera Powder 1 tsp
Garam Masala Powder 1/2 tsp
Finely Chopped Ginger 1 tsp
Finely Chopped Green Chilly 2 nos
Chopped Coriander
Salt to taste
Ghee as required
Method
1. Trim the top and the bottom off the Banana before boiling it in a pot of water for about 15-20 minutes or done.
2. Peel the boiled banana and grate. also grate the boiled potatoes. Mix them both in a bowl and add the spices, followed by the coriander.
3. In a pan, add 2 tsp ghee and heat. Add the ginger and green chillies when the ghee is hot and saute. Add this to the mixture and mix everything together,
4. Soak the dried figs for a couple of hours in warm water. Drain the water and chop the rehydrated figs.
5. Take a small amount of the mixture and stuff it with the chopped figs, shaping it into the round kebab.
6. Once you have used all the mixture and made it into kebabs, heat some ghee on a pan and put the kebabs to shallow fry.
7. Gently press the kebabs on the surface of the pan and cook till brown on one side, around a minute. Now change the side and repeat.
8. Remove on a plate lined with kitchen towels and let it absorb the extra fat.
9. Serve hot with the accompaniment of your choice.
P.S. – You can add other dried fruits and nuts to the same mixture like cashews, raisins and sultanas, either in a combination or individually.
